Pineapple Pudding

Ingredients

Pineapple - 1 (chopped)

Sugar - 5-7 Tbsp
Milk - 1 liter
Condensed milk - 1 tin
Vanilla essence - 1 tsp
Gelatin - 1.5 Tbsp
Hot Water - 1/3 cup
Cold water -1/3 cup
Strawberry/Cherry - for decorating

Preparation

In a pan, put the chopped pineapple and 3-4 tbsp sugar and cook till it becomes soft. (Adjust the sugar depending on the sweetness of pineapple. ) Spread it on a pudding tray. Then slightly press it using the spoon and keep it aside.
Soak gelatin in 1/3 cup of cold water for 5 min. Then add hot water to this. Like this we can melt the gelatin. Keep it aside.
In another pan, boil milk and 2 tbsp sugar. When the milk boils, reduce the flame and add the condensed milk slowly while stirring the milk. Taste the milk now so that you can add more sugar if required. Allow it to boil again. Add the melted gelatin and keep on stirring. Then add vanilla essence and switch off the flame.
Pour this slowly over the pineapple in the tray. Keep it aside for 1-2 hours for setting. Once it is set, u can decorate it with strawberry/cherry and keep it in the refrigerator and have it chilled.
